Ingredients :

For the base

  • 1 cup (110g) oat flour – make your own by blending plain rolled oats into a flour in the food processor. Use gluten-free if allergic/intolerant
  • 1/2 cup (50g) ground almonds
  • 1/4 tsp salt
  • 1 tbsp coconut sugar or regular sugar
  • 1/4 (4 tbsp) cup coconut oil
  • 1/4 (4 tbsp) cup cold water

For the filling

  • 2 plums, sliced
  • 1/2 cup (85g) blueberries
  • 1/2 tbsp cornflour
  • 1 tbsp coconut sugar or regular sugar
  • 1 tbsp lemon juice

Method :

  1. Preheat your oven to 190°C (170°C fan assisted)/ 375 °F. 
  2. In a bowl mix together the oat flour, ground almonds, salt and coconut sugar. Add in the coconut oil and cold water. Mix until you have a dough that hold together well. If the dough is soft, refrigerate for 30 minutes to make it easier to work with. 
  3. Roll out into a rough circle about 1/2 cm thick on a well floured surface. Spread the plum mixture in the middle and fold over the edges (see video above).
  4. Bake for 40-50 minutes until the edges are golden brown. 
  5. Serve warm with ice cream or custard. 
  6. Enjoy!
