You folks, I'm nothing if not fair, and I need to state that I've been feeling the loss of the flavor of a decent chicken serving of mixed greens. I haven't been missing chicken, hell no, however the richness and the crunchiness of a decent chicken plate of mixed greens with bits of red grapes, dried cranberries, and celery, and green onions, that, I've been absent. In the event that you've been feeling a similar way, you're going to cherish me for making this.

So a lady (me) strolls into a general store, snatches a ticket at the shop counter, and investigates the entirety of the servings of mixed greens for the situation while she persistently sits tight for her number to be called. There's a broccoli serving of mixed greens, bean plate of mixed greens (what I requested), different pasta plates of mixed greens, and a smooth great chicken plate of mixed greens. Ingredients :

  • 1 quart (960 ml) no-chicken broth or vegetable broth
  • 1 (20 oz [565 g]) can young jackfruit in water
  • ½ cup (56 g) raw cashews, soaked in water for at least 4 hours
  • 1/3 cup (80 ml) unsweetened almond milk
  • Juice from ½ of a lemon
  • 1 garlic clove, sliced
  • ½ tsp finely ground sea salt
  • 1 large celery stalk, finely chopped
  • 1 green onion, finely chopped
  • 1 cup (184 g) red grapes, halved
  • 2/3 cup (88 g) dried tart cherries
  • 1 tbsp (2 g) fresh thyme, stems removed and minced
  • Finely ground sea salt and black pepper to taste

Instructions :

  1. Bring the broth to a boil and reduce to simmer. Drain and rinse the jackfruit and add to the broth. Simmer for 1 hour. Drain the broth and shred the jackfruit.
  2. Drain and rinse the cashews and put in a high-powered blender with the almond milk, lemon juice, garlic, and salt and blend until smooth and creamy, approximately 90 seconds. You shouldn’t see or taste any pieces of the nuts.
  3. Put the jackfruit, cashew cream (add slowly until you get the desired amount of creaminess), celery, green onion, grapes, cherries, thyme, and salt and pepper in a large bowl and stir until combined. Chill or eat at room temperature. Refrigerate in an air tight container for up to 2 days.
