Try not to squander that extra bread – follow the Italian convention and make it into a delightful panzanella serving of mixed greens with some succulent tomatoes. Unbelievably simple to make, it's an extraordinary side or light lunch.

Throughout the late spring, I love getting a charge out of all the great tomatoes that we jump on the neighborhood ranchers' market. Between being increasingly nearby with the goal that they don't should be chilled for transportation, and the assortments, they simply taste such a great amount of better than the ones you escape season.

I especially like the treasure assortments that we in some cases develop at home. Unfortunately we don't get very enough direct sun, nor have that much space, to become many. Another motivation behind why the ranchers' market is extraordinary to have close by.

Anyway, I find when you get great tomatoes, it merits appreciating them such that shows them off. Dishes like a straightforward caprese, plain or smoked salmon bruschetta and gazpacho all depend on having great tomatoes so are extraordinary options. As is panzanella.

Ingredients :

  • 2 cups bread 65g, diced, stale is best
  • 2 tomatoes
  • 1/2 shallot
  • 4 basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp wine vinegar eg champagne vinegar
  • 1 pinch salt
  • 1/8 tsp Dijon mustard (optional - not traditional but helps emulsify dressing)

Instructions :

  1. Dice the bread in roughly bite-sized chunks and put in a bowl. Dice the tomatoes in roughly the same size then add them to the bowl.
  2. Thinly slice the shallot and shred the basil leaves and add both to the bowl.
  3. Whisk together the oil, vinegar, salt and Dijon mustard and pour over the other ingredients. Gently toss then leave the salad to sit around 20 minutes, ideally, before eating to let the flavors mingle (you can also leave a little longer in the fridge).
