INGREDIENTS

  • 1 can light coconut milk
  • 12 cardamom pods (can sub 1/2 tsp ground cardamom)
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 1/2 cups cooked rice (I used jasmine rice)
  • 2 tsp orange zest

INSTRUCTIONS

  1. Place the coconut milk and cardamom pods in a small pot on medium-high heat. Let bubble for one minute, then reduce heat to low and let simmer for 10 minutes to infuse the coconut milk with the cardamom.
  2. Using a spoon, remove the cardamom pods.
  3. Add the cinnamon, vanilla extract and maple syrup and stir until combined.
  4. Next, add the rice and let simmer on medium-low heat for 10 minutes until the rice becomes nice and creamy.
  5. Stir in the orange zest.
  6. Top the rice pudding with fresh berries, shredded coconut, maple syrup, or any other toppings you like!
